“The Butcher” Coming Soon - Stauning’s Oldest Whisky Yet
Former butcher and Stauning Whisky co-founder Mogens Vesterby has selected his cask, and Stauning is now ready to release the second bottling in its Founder’s Choice series: “The Butcher.”
The Butcher is Stauning Whisky’s oldest release to date. It’s a peated single cask single malt whisky matured in a first-fill bourbon cask – Cask No. 79.
Stauning Whisky was founded by nine people from very different backgrounds – a helicopter pilot, a chef, a teacher, a doctor, four engineers, and of course, the former butcher, Mogens. “The Butcher” is his signature whisky, made with a deep respect for traditional craftsmanship. It’s crafted from floor-malted grain grown around the distillery, and double-distilled in small copper pot stills heated over open flames. This is a locally rooted, peated single malt whisky, matured for over 12 years in a refill bourbon cask from Kentucky.

When Mogens, who was also Stauning’s first Master Distiller, set out to choose a cask for his signature release, it felt only natural to select a whisky he had distilled himself all the way back in 2011.
"The smoke from Danish peat reminds me of the scent in the butcher shop when we smoked bacon and sausages back in the day. I was really determined to find a whisky I had distilled myself from my time as Master Distiller, so we had to dig deep in the warehouse to find a cask that old. Most of them have already been sold, so I was thrilled when we came across cask no. 79. A peated single malt whisky. The oldest whisky we’ve ever bottled at Stauning," says Mogens Vesterby. Mogens, who still lives in Stauning, wanted to create a whisky that really highlights the local ingredients and that unique smoky character.
That’s why this whisky is made from locally grown barley, smoked with Danish peat, and matured in a first-fill ex-bourbon cask to add a touch of sweetness to the smoky notes.

The result is a full-bodied and smooth whisky with a long, smoky finish. You’ll find notes of campfire smoke, mild tobacco, citrus, thyme, rosemary, heather honey, salted caramel, and vanilla.
Founder’s Choice – The Butcher is a single cask release, meaning there will naturally be a limited number of bottles. Cask No. 79 yielded just 178 sequentially numbered bottles of ‘The Butcher’, all bottled at cask strength.
