Introducing Stauning HØST: A Celebration of Danish Nature
HØST is our latest release from early 2024, which is made from rye malt whisky and single malt, distilled with intention that honours the tranquil terroir of the farmland surrounding the distillery.
For centuries, the cultivation of rye and barley has played a central role in the life in the West Coast of Denmark. There is a deep-rooted connection to the land that can be seen in the people, places and produce of the region, where the following of the seasons is as important as the ticking of the clock.
Inspired by this, Danish distillery Stauning launches HØST, Danish for ‘Harvest’, paying homage to the relationship between humans and nature, a symbol of the turning seasons and the cycle of growth that produces the raw materials needed to make rich and flavoursome Danish whisky.
Crafted with intentionality
Rooted firmly in a sense of place, the whisky is a blend of rye malt whisky and single malt, distilled with intention that honours the tranquil terroir of the farmland surrounding the distillery.
From fields just a few miles away, each grain is floor-malted at the distillery - a process that few distilleries in the world still do - before distillation and maturation all take place on-site, creating a spirit that reconnects to its raw materials to capture the essence of its home whilst celebrating the collective effort involved in its creation.
Alex Munch, one of the 9 founders of Stauning Whisky, commented, “Each harvest, farmers give over a portion of their fields to wildflowers, adding a riot of colour to the stretches of grains that carpet the land. We created HØST to celebrate the closeness of nature and nurture, the deliberate rye and barley hand-in-hand with the sudden colour of wild flowers, just as our modern, sustainable distillery sits alongside acres of green fields.”
The Distinctive Taste of Stauning HØST
Stauning HØST is a smooth, fruit-forward, and floral whisky, reminiscent of the warmth and comfort of the late summer Danish sun during the harvest time of our meticulously selected and locally sourced rye and barley. This double malt whisky is crafted in Denmark with a marriage of single malt and malted rye whisky, aged in American oak casks and with a touch of Port wood.
A distinctly Danish approach to whisky: designed with intentionality, simplicity, sustainability, timeless style, and a touch of “hygge”. Using 100% floor malted local Danish rye and Danish barley, we craft a timeless whisky style distinguished by its profound depth of flavour and quality. Double distilled in 24 small, direct-fired copper pot stills to produce malt whisky with a rich flavour.
