Stauning’s Founder’s Choice series honours each of our nine founders, inviting them to express their passion through their own signature release. “The Butcher” is the second chapter in this story, crafted by Mogens Vesterby, former master distiller and professional butcher.
Mogens brings his deep respect for heritage and craft to a whisky that’s as bold and honest as his roots. Distilled by his own hand in 2011, this peated single malt spent over 12 years maturing in a single first-fill ex-Bourbon cask from Kentucky. The result is a whisky with richness and depth: warm bonfire smoke, salted caramel, herbal complexity, and a long, velvety finish.
At 60.3% ABV and just 178 bottles in existence, this is Stauning’s oldest release to date - and a true gem from the back of the warehouse.

A Whisky Rooted in the West Coast
As Stauning Whisky's first Master Distiller, Mogens Vesterby knew exactly what he was looking for. His vision was clear: a whisky distilled by his own hands, rooted in tradition, and infused with the essence of his past. That search led deep into the warehouse, to a hidden cask from 2011 — peated, bold, and full of character.
This single malt is made from locally grown barley, floor-malted and smoked with Danish peat, then matured for over 12 years in a first-fill ex-Bourbon cask. It captures the raw, elemental character of Stauning’s surroundings, while the long rest in oak imparts notes of vanilla, salted caramel, and rich depth to its bold, earthy smokiness.

Nose:
