Stauning’s Founder’s Choice collection pays tribute to our nine founders, each bringing a unique perspective to the world of whisky. This first release, “The Chef,” was crafted by Henning Svoldgaard, a former chef whose expertise in flavor combinations has shaped Stauning’s approach from the beginning.
Henning's culinary spirit led us to a rare finishing touch. This whisky has been aged in a bourbon cask and finished in an exceptional cask from “Giuseppe Giusti,” one of the oldest and most revered balsamic vinegar producers. The cask infuses the gently smoked single malt with a subtle, velvety sweetness, savory umami, and a complexity reminiscent of aged balsamic vinegars.
Produced in a small batch of only 189 bottles, this cask-strength release offers an experience that reflects both Henning’s culinary heritage and our commitment to quality craftsmanship.

Crafted with Tradition and Innovation
Henning’s journey to Italy’s Acetaia Giusti, a 400-year-old balsamic producer, became part of the whisky’s story. Drawn to the rich, layered flavors of their historic casks, Henning recognized a parallel between their approach and Stauning’s dedication to flavour and tradition. This connection deepened as he finalized the idea, blending his culinary insights with Giusti’s legacy.
Using 100% floor-malted local barley, smoked with Danish heather, this single malt embodies the rugged beauty of Denmark’s West Coast and the deep complexity of Modena’s balsamic tradition.
